This dressing has a creamy texture, with a tang from the peppercorns. Asiago cheese does not quite have the sharpness of Parmesan, but the pepper would override that cheese. Back in the late 1980s, a restaurant in New Hampshire made their own pepper Parmesan dressing. This is the closest thing I have found!!!
